shred).  Dip tortilla in green sauce.  Put chicken and monterey jack cheese, then roll.  Fill Pan and then pour remaining green sauce over top.  Sprinkle with monterey jack cheese.  Cover and freeze. Pour warm water into bowl of electric mixer fitted with a dough hook*. In a small bowl, combine water and 1 tablespoon sugar, and stir to dissolve sugar. Sprinkle with yeast, and let sit 10 minutes; yeast should be foamy.&lt;/p&gt; &lt;p&gt;2. Add 1 cup flour to yeast, and mix on low until combined. Add salt and 4 cups flour, and mix until combined, about 30 seconds. Beat on medium-low until dough pulls away from sides of bowl, about 1 1/2 minutes. Add 1/2 cup flour, and knead on low 1 minute more. If dough is still wet and sticky, add 1/2 cup more flour (this will depend on weather conditions); knead until combined, about 30 seconds. Transfer to a lightly floured board, and knead about ten times, or until smooth.&lt;/p&gt; &lt;p&gt;3. Pour oil into a large bowl; swirl to coat sides. Transfer dough to bowl, turning dough to completely cover all sides. Cover with a kitchen towel, and leave in a warm spot for 1 hour, or until dough has doubled in size.&lt;/p&gt; &lt;p&gt;4. Heat oven to 450°F. Lightly spray two baking sheets with cooking spray (parchment paper, ungreased, also works). Set aside. Punch down dough to remove bubbles. Transfer to a lightly floured board. Knead once or twice, divide into 16 pieces (about 2 1/2 ounces each) or 32 if making miniature pretzels, and wrap in plastic.&lt;/p&gt; &lt;p&gt;5.   Roll one piece of dough at a time into an 18-inch-long strip. [I find the pretzels much easier to roll on an &lt;i&gt;un&lt;/i&gt;floured board, oddly enough, but see what works for you.] Twist into pretzel shape; transfer to prepared baking sheet. Cover with a kitchen towel. Continue to form pretzels; eight will fit on each sheet (you may need a third sheet if making miniatures). Let pretzels rest until they rise slightly, about 15 minutes.&lt;/p&gt; &lt;p&gt;6. Meanwhile, fill large, shallow pot with 2 inches of water. Bring to a boil. Add baking soda (and step back, it foams up quickly) and remaining 2 tablespoons sugar. Reduce to a simmer; transfer three to four pretzels to water. Poach 1 minute on each side. Use slotted spoon to transfer pretzels to baking sheet. Continue until all pretzels are poached.&lt;/p&gt; &lt;p&gt;7. Beat egg with 1 tablespoon water. Brush pretzels with egg glaze. Sprinkle with salt. Bake until golden brown, 12 to 15 minutes. Let cool on wire rack, or eat warm. Pretzels are best when eaten the same day, but will keep at room temperature, uncovered, for two days. Wrap with plastic wrap, then foil to keep out freezer burn taste.  Put in freezer. Add the onion and cook over low heat to wilt for 10 min, stirring. Add the garlic, celery, and carrots. Cook, stirring, 1 minute longer.  Mix in the spices and herbs.  Add the bell peppers, black-eyed peas, tomatoes with juices, and vegetable broth. Bring to a boil. Reduce heat to medium-low and cook, partially covered, for 10 min. for flavors to  blend. Adjust seasonings.  One-half hour before serving, add zucchini and bring mixture to a boil. Stir in the rice, cover, reduce heat to low and cook for 20 min. Make a large batch of these, and freeze them in meal-size portions to cook during the week.&lt;br /&gt;&lt;p&gt;Yield - Makes 30 meatballs (6 to 8 servings)&lt;/p&gt;&lt;p&gt;Ingredients&lt;br /&gt;1/2  pound  mild Italian sausage, casings removed (or use ground beef)&lt;br /&gt;3/4  pound  ground turkey&lt;br /&gt;1  cup  fine, dry breadcrumbs&lt;br /&gt;3/4  cup  minced onion&lt;br /&gt;4  large eggs, lightly beaten&lt;br /&gt;3/4  cup  grated Parmesan cheese&lt;br /&gt;1  tablespoon  minced garlic&lt;br /&gt;1/2  teaspoon  salt&lt;br /&gt;1/2  teaspoon  pepper&lt;br /&gt;2  teaspoons  dried Italian seasoning &lt;/p&gt;&lt;p&gt;Preparation&lt;br /&gt;1. Combine sausage, ground turkey, and next 8 ingredients in a large bowl until well blended.&lt;br /&gt;2. Gently shape meat mixture into 30 (1 1/2-inch) balls. Bake until done. Add basil leaves, salt and pepper.  With the processor running, slowly pour the Olive Oil into the bowl through the feed tube and process until the pesto is finely pureed.  Add the parmesan and puree for 1 min. Cook beans in water on stove until soft, about 90 min.  (after trying this, we don't think you need to do this for as long - maybe an hour would be fine). Drain, discard bean water.&lt;br /&gt;&lt;br /&gt;Mix together all ingredients in slow cooker.  Mix Well.&lt;br /&gt;&lt;br /&gt;Cover. Drain.&lt;br /&gt;&lt;br /&gt;In a large stockpot over medium heat, heat the olive oil and saute the onions, leeks, garlic, salt, pepper, thyme, and cumin for 20 minutes, or until the vegetables are translucent and tender. Add the celery and carrots and saute for another 10 minutes. Add the chicken stock, tomato paste, and drained lentils, cover, and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, or until the lentils are cooked through and tender. Check the seasonings. Dredge in flour which has been mixed with salt and pepper. Heat&lt;br /&gt;oil in large pan. Saute meat in batches over med. heat, one layer at a time, until&lt;br /&gt;browned on all sides. Remove meat as it browns.&lt;/p&gt;&lt;p&gt;In same pan add onions and sugar. Saute, stirring constantly, until glazed and lightly&lt;br /&gt;browned. (Add more oil if pan is too dry). Pour off excess fat. Add the wine to the pan.&lt;br /&gt;Over moderate heat, stirring constantly, scrape up all residue which has accumulated in&lt;br /&gt;the bottom of the pan. Cook for 2 minutes; stir in tomato sauce, beef broth, onion soup&lt;br /&gt;mix, basil, thyme orange rind and garlic.&lt;/p&gt;&lt;p&gt;Return meat to casserole. Cover and bring to a slow boil. Bake at 325 degrees,&lt;br /&gt;stirring occasionally for 3+ hours, or until fork tender. If sauce bubbles rapidly, reduce&lt;br /&gt;temperature to 300 degrees, so the juices will not evaporate. Remove from oven and if&lt;br /&gt;not serving immediately, place a damp dish towel directly on top of the meat. This will&lt;br /&gt;prevent it from drying out as it cools. (can be refrigerated for 4 days, or frozen)&lt;br /&gt;Before serving, cook carrots in boiling water for 10 minutes or until almost tender;&lt;br /&gt;drain. Remove all fat from stew. Add carrots, baby onions, and mushrooms and simmer&lt;br /&gt;on top of the stove or in the oven at 325 degrees, stirring occasionally, until heated&lt;br /&gt;through and carrots are tender (about 30 minutes). Combine remaining ingredients (minus&lt;br /&gt;flour &amp;amp; water). Simmer 2 1/2 hours. Dissolve flour in water and add to thicken. Set aside.&lt;br /&gt;&lt;br /&gt;In a pie pan combine bread crumbs, parmesan. cheese, 1 t. oregano, garlic salt, and&lt;br /&gt;pepper. Set aside. In a sm. bowl stir together the 4 T. butter, parsley, &amp;amp; remaining 1/2 t.&lt;br /&gt;oregano. Spread about 1/2 T. of herb-butter mixture across each breast about 1/2" from&lt;br /&gt;lower edge; lay a strip of jack cheese over it. Sprinkle with paper and top with a piece of ham and 3 tablespoons of cheese.&lt;br /&gt;Roll up like a jelly roll. Tuck in ends and secure with wooden toothpicks. Spray and 11x7&lt;br /&gt;baking dish with Pam and set aside. In a shallow dish, combine paprika, garlic powder,&lt;br /&gt;and cornflake crumbs. 5-6 russet potatoes into 1 inch or less cubes&lt;br /&gt;• Dice ½ brown onion&lt;br /&gt;• Dump potatoes and onion into a large pot&lt;br /&gt;• Barely cover with salted water and boil until soft.&lt;br /&gt;• When potatoes are soft drain most of water off.&lt;br /&gt;• Cover potatoes with milk and cream (if desired)&lt;br /&gt;• Add about 4 tablespoons butter to pot.&lt;br /&gt;• Cook on package)&lt;/li&gt;&lt;li&gt;2 tsp garlic powder (or small amount of minced garlic)&lt;/li&gt;&lt;li&gt;2 cups milk&lt;/li&gt;&lt;li&gt;6 oz grated Parmesan cheese&lt;/li&gt;&lt;li&gt;1/4 tsp black pepper (or to taste)&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Melt butter in non-stick skillet over medium heat&lt;br /&gt;Add cream cheese and garlic powder whisk until mostly smooth.&lt;br /&gt;Add milk a little at a time.&lt;br /&gt;Stir in Parmesan and pepper.&lt;br /&gt;Remove from heat when of desired consistency.&lt;br /&gt;Sauce will thicken rapidly, thin with milk if cooked too long.&lt;br We're going to get thsi right if it kills us (it just might).&lt;br /&gt;I created this blog only for us.  You have been added as authors to this blog so you can post on it.  If you have a comment or a recipe to add, just login and add it (don't worry kimberly, I'll teach you how if you get lost).&lt;br /&gt;&lt;br /&gt;If we have all the recipes here, they won't get lost and we'll have them at our fingertips.&lt;br /&gt;As you eat meals, you can vote on the poll at the bottom of the page.
